video about my coffee my granola my depression

Okay as we all know I am this "starving" artist. My family and I aren't rolling in dough and well honestly I have to eat healthy on the cheap. so today I ventured into the realm of granola, I've started eating LCHF, but I miss my grains, and what I miss most is my granola!!! Everyone has seen me post a billion times about eating granola and whatever for years, its one of my all time favorite "breakfastie" things! Its got a nice crunch, Its sweet, Its salty, Its nutty, Its everything that makes me happy!





So I follow this wonderful woman, her name iLeanne Vogel. she runs the Healthful Pursuit Bloghas an awesome Youtube Channel  and a pod cast and probably more things I haven't listed. anyways when i'm feeling lost with my meal plans recipes or if im not quite feeling great I pop on her youtube and watch one of her little vlogs. the last one i watched was on her Keto Granola Dust . it  inspired me to go try my hand at this granola thing and this is what I came up with.




Okay I promise it wont break the bank for the ingredients, as I have already stated I don't have the cash to throw around. So the ingredient list is as follows:


  • Bob's Red Mill Unsweetened Shredded Coconut
  • Bob's Red Mill Organic Golden Flaxseed Meal 
  • Stevia In The Raw
  • Nice! Sunflower Kernels Roasted 
  • Sesame seeds
  • Course ground sea salt
  • Coconut oil
  • Vanilla extract

Okay now measurements, I'm not going to be exact, because I live by the seat of my pants so I eyeball everything. 

Get out your little mixing bowl a wooden spoon and your 1/4 cup measuring cup and lets get rocking!

Dump in just under 1 half cup of your shredded coconut, a heaping 1/4 cup of sesame seeds,  a heaping 1/4 cup of your flaxseed meal, about 2 tbs of stevia, 1/2 cup of sunflower kernels, and a pinch of sea salt into your bowl give it a nice mix! 

Now, melt about 2 tablespoons worth of coconut oil so its a nice liquid and pour about a tsp and a half of vanilla in your oil and dump it in your bowl of soon to be granola. and mix until combined and smelling heavenly. 

Have your parchment lined cookie sheet ready and spread your granola out on the sheet evenly ( it doesn't have to be perfect. honestly i think unevenness makes it have better character, bold nutty flavors here sweet happy flavors there.) So, you will sit this in your oven at 350 for 15 minutes, you will smell when its ready. It gets a sort of nutty scent <3 

Let it cool and store it in a mason jar a Tupperware will work as well. It may not survive the week.

Use it on top of your yogurts, fruits, whatever you would granola. id even try it like a cereal in warm coconut milk. i eat mine with a spoon.... thats all i need lol. 

This is a nice base that you can modify to your liking too. Add chocolate or cinnamon more nuts what every your heart desires.
